| In 1995, Patrick Mallard made his barrel selection: he works only with barrels from TONNELLERIE BILLON. In the image of their vinifier, his wines are generous in character. Rigorous control of yields, sophisticated equipment, very long vatting at low temperatures are some of the numerous characteristics of this domain of excellence. The wine he produces offers the necessary structure to take the quintessence from oak barrels. Today, Patrick Mallard has found the right balance between the origin of the wood and the necessary heating degree for the expression of the style he is looking for. He gives preference to a medium plus type heating and to wood coming from the Vosges, Limousin or Allier that he combines according to vintages and appellations. This marriage of convenience is also a match of passion: Patrick Mallard has the quiet strength of one who has found a loyal friend for life and can focus on other aspects of "his children", which are always a work in progress. "The Domaine Michel Mallard delights us with a range of Burgundy wines full of panache : a very expressive bouquet followed by a persistant aftertaste on balanced tanins and a judiciously controlled woody taste, certainly the fruit of a good selection in the purchase of oak barrels from Billon Cooperage destined for their production. " Billon is a more tense style barrel. It respects the fruit but it is tighter on the palate with a lengthy finish. The Vosges barrel enhances the spiciness in Shiraz while on Chardonnay the respect for the fruit acts as a support for the wine. |
